Recently, a team at Washington State University conducted a study on the efficacy of garlic. They found that garlic is 100 times better than two common antibiotics at fighting bacteria that cause foodborne illnesses.

Allicin is made when you crush garlic. In research studies conducted by the Clinical Research Center in New Orleans, scientists have discovered that it can help reduce your blood pressure and cholesterol levels. It can also prevent blood clots and hardening of the arteries.

Other than being amazing for your heart, this compound can also kill viruses and bacteria that are responsible for the flu, colds, and earaches. It can help heal diarrhea and digestive problems. Some studies are even starting to show that allicin can prevent different types of cancer from forming.

For years, people have known that garlic contained anti-fungal and antibacterial properties. Because of this, many people add garlic to their recipes or serve it on bread. While scientists know that allicin has healing properties, they have not categorically proved that people can gain all of these benefits from eating actual garlic.

To prove garlic's efficacy, the global research institution, Cochrane Database, looked at how eating garlic might affect the duration of a cold. They found that people who consumed garlic had cold symptoms for 4.5 days instead of 5.

Garlic Soup Recipe

You can enjoy some of the benefits of garlic with this soup. If you feel like a cold is starting, try eating this soup. You can also use it as a preventative measure if you have been around sick people recently.

  • 26 cloves of garlic, unpeeled
  • 2 ¼ cups sliced onions
  • 4 lemon wedges
  • ½ teaspoon cayenne pepper
  • ½ cup coconut milk
  • 2 tablespoons organic butter
  • 3 ½ cups organic vegetable broth
  • ½ cup fresh ginger
  • 2 tablespoons olive oil
  • 1 ½ teaspoons fresh thyme, chopped
  • 26 cloves of garlic, peeled

1. Start by preheating the oven to 350° Fahrenheit. Now, put 26 garlic cloves in a glass baking dish. Add in the olive oil and coat the garlic with sea salt.

2. Cover the dish with tin foil. Bake the garlic until it turns tender and golden brown. This will take about 45 minutes.

3. Remove the garlic from the oven and allow it to cool. Now, squeeze the cloves between your fingertips to release the garlic from the peel. Place the cloves in a small bowl.

4. Begin melting butter on a medium-high heat in a saucepan. Stir in thyme, onions, cayenne powder and ginger. Cook the mixture until the onions are translucent. Then, add in the roasted garlic as well as the remaining 26 garlic cloves. Cook for 3 minutes.

5. Now, add in the vegetable broth and bring it to a simmer. Cover the simmering mixture for about 20 minutes. Divide the mixture into small batches and puree it in a blender until it is smooth.

6. Return the soup to the saucepan. Stir in the coconut milk and bring the mixture to a simmer. Add pepper and sea salt to season the soup. Finally, divide the soup into four bowls. Squeeze the juice of a lemon wedge into each bowl.

You can make this soup up to a day in advance. It can be stored in the refrigerator until you use it. When you're ready to eat the soup, warm it up on medium heat as you stir it.
