While the chain is known for its super-delicious coffee creations (hello, pumpkin-spice latte!), you are probably familiar with their display case of indulgent treats that almost certainly test your self-control. One better-known treat is Starbucks lemon loaf cake. Its oh-so-moist texture and uplifting lemony flavor topped with perfectly sweet/tart glaze keep us coming back for more.

Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup sugar
- 1 cup Greek yogurt, plain
- ½ cup vegetable oil
- 1/3 cup fresh lemon juice
- 3 eggs
- 2 tablespoons lemon zest
- 2 teaspoons baking powder
- ½ teaspoon salt

Icing Ingredients:
- 2 cups powdered sugar
- 4-5 tablespoons fresh lemon juice
How to make it:
- First, preheat your oven to 350 degrees Fahrenheit and use non-stick spray to grease a 9x5 cake loaf pan. Beat together eggs and sugar in a large bowl. Add Greek yogurt and vegetable oil to the mixture. Stir until well-mixed.
- Next, add lemon juice and lemon zest to the bowl and mix until blended. Now, grab another bowl for your dry ingredients. Combine flour, baking soda, and salt in the second bowl. Stir together until well mixed, and then add them gradually to the egg-yogurt-oil mixture, stirring as you go. However, don't over-mix! Just stir until the ingredients seem to be well-blended.
- Now pour your batter into the greased cake tin. Smooth the surface of the batter in the pan with a spatula. Bake in your preheated oven for about 50 minutes, or until a toothpick inserted in the center comes out clean. Tip: if you notice the top of your cake becoming too brown while baking, cover with aluminum foil for the final 5-10 minutes.
- Icing: Whisk together two cups of powdered sugar and four tablespoons of lemon juice. Then, add another one to three tablespoons of lemon juice until the mixture reaches your desired icing consistency.
- Once your cake has cooled off, carefully remove it from the cake tin by flipping upside down on a clean surface. Then, pour icing over the top of the cake and allow to set. Voila! Your lemon cake is ready to go in the fridge, stored in an air-tight container. Whenever the urge hits you, you can now slice off a piece of lemony deliciousness.
