Creamy Garlic Butter Chicken With Potatoes

There are lots of ways to cook chicken. Grilled, cooked, fried - there are many tasty combinations and dishes using it. One of these wonderful tasty treat is this creamy garlic butter chicken recipe from the YouTube channel Cooking with Claudia. It's easy to make and uses ingredients you can get basically everywhere. And while it takes some time until you can savour the finished dish and the chicken needs to marinate, most of the work is done by the oven. The perfect kind of food if you want something decent, but don't feel like doing a lot of work or dirtying many dishes!

This creamy baked chicken recipe is going to be a family favorite. Claudia, of the aptly named Cooking with Claudia YouTube channel, made a video for this wonderful recipe back in 2018. The instructions are easy to follow, but before we get started: here is the list of ingredients, as given by Claudia, you need to make this savoury delight:

  • 6 Chicken Thighs
  • salt and pepper to taste
  • 1 teaspoon garlic
  • 1 teaspoon onion powder
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 6 medium Potatoes
  • Olive oil 4 cups spinach (Use as much as you want)
  • 1/4 cup butter (I used unsalted)
  • 4 cloves garlic
  • 2 Tablespoons Flour
  • 1 cup Chicken Broth
  • 1/2 cup Whole milk
  • 1/2 cup Heavy Cream
  • 1/2 cup Parmesan cheese
  • 1 Chicken Bouillon cube
  • 3 Tablespoon fresh parsley
  • 3 Tablespoons fresh basil

Now to get started, you need to mix all the spices (garlic, onion powder, rosemary, thyme, paprika, salt and pepper) into a dry seasoning mix and rub it into the chicken thighs from both sides. Once you've done this, wrap the thighs into some clingfilm and let them marinate in the fridge for about an hour.

Then cut the potatoes into eight approximately same-sized pieces. Put these pieces into a baking pan, drizzle them with a bit of oil and flavor them with salt and pepper. Mix it all up with a spoon and partially bake them at 400°F for roughly 30 minutes. While your potatoes are baking, get the marinated chicken thighs out of the fridge and heat up a pan. The chicken thighs need to be seared from both sides for 3-4 minutes, starting with the skin side, until they are a golden brown. This way the chicken will get a nice crisp skin and flavor.

Once this is done, place the thighs aside for later and place the spinach in the pan. Fry it just until it starts wilting and then put it aside as well. Then we can get to the sauce! Add the butter to the pan and let it melt. Add the chopped garlic and fry it until it starts smelling fragrant. Then add the flour and mix it in, cooking it for about a minute. This gets the flour taste out. Now you just add the chicken broth, milk, heavy cream, parmesan cheese, chicken bouillon cube, freshly chopped parsley and basil, and cook it for a minute to finish the sauce.

Now the 30 minutes should be up, so get the potatoes out of the oven. Place the chicken thighs directly on top of them, add the spinach wherever you want it and pour the sauce on top. Put everything back into the oven for another 35-40 minutes and your creamy garlic butter chicken with potatoes is ready!
